In November 2024, AK Food successfully shipped its first batch of Cay Thi rice porridge to the United States, followed by a second shipment in December. Nguyen Thi Thu, the company’s general director, shared that while many companies announce their first shipment immediately, AK Food waited to ensure the product was well-received before making an official announcement.
The company’s decision to use ST25 rice, recognized as one of the world’s best, posed a significant challenge in the development of the rice porridge recipe. According to Thu, the research and development team spent over 1,000 hours over three months refining the recipe to preserve the rice’s signature fragrance while ensuring the porridge remained smooth and free of excess clumpiness or stickiness.
“Using ST25 rice made the process more complex, but we believe that striving for the highest quality is always worthwhile,” Thu said.
The exports to the U.S. feature a variety of rice porridge flavors, including specialties such as Nghe An eel porridge from north-central Vietnam, snakehead fish porridge from the Mekong Delta, and Da Lat vegetable porridge. These dishes highlight the diversity of Vietnam’s culinary heritage and the unique regional identities each variety represents.
