Foppen Seafood, a brand under Hilton Food Group, is introducing new product lines, including a smoked salmon spread and smaller packaging options, in response to the changing consumer market in the U.S. This strategy comes as an adjustment to the high costs of raw materials, consumer budget constraints, and the competitive retail environment. Remko Vedder, the U.S. Sales Director of Foppen, shared at the 2024 Seafood Expo North America in Boston, Massachusetts, that the company has been in the market for two decades, adapting to the evolving demands for retail space and consumer preferences. Despite the premium smoked salmon market’s challenges in 2024, Foppen aims to captivate U.S. consumers with its traditional offerings and new flavors.
Wilbert Vedder, Foppen’s Chief Commercial Officer and Remko’s brother, highlighted the versatility of the new hot-smoked salmon spread, which can be used as both a lunch item and a snack. The spread, a result of three years of research and development, consists of 50 percent smoked salmon combined with mayonnaise and other undisclosed ingredients. The introduction of this spread marks Foppen’s entry into a new product category, with the added benefit of utilizing frozen transportation to the U.S., enhancing store stocking efficiency. This product innovation also addresses food waste by optimizing the use of salmon trimmings, thereby lowering costs.
Expanding its portfolio, Foppen is also venturing into frozen products with pre-sliced smoked salmon in flavors like jalapeño, seaweed, and flame-roasted. These products are targeted at both retail and foodservice sectors, with successful introductions in major retail outlets and a growing presence in hotels, restaurants, and clubs. Henri van de Bilt, the new managing director overseeing Foppen’s foodservice operations, emphasizes the convenience and cost-effectiveness of their offerings, particularly in the sushi market, which continues to expand across various retail formats.
Foppen’s presence at the Seafood Expo North America also showcased other innovations, such as Chili and Lime Salmon Skewers, sous-vide, air-fryer, and steamed frozen salmon products, along with a decorative braided and glazed salmon item, further diversifying its product range to meet evolving market demands.
